Ah, this could be very useful to those of us wanting to look at brand new software (such as Zavala), but don’t have the latest Mac OS. (Mojave here)
Is “spin up an instance” something you do on your personal/work Mac?
How?
Do you need “virtual machine” software to do that?
Or is an on-line service such as at Digital Ocean or Shells?
Or something else entirely?

I was going to try using https://www.macstadium.com. I’ve never used it myself before, but I do have developer friends that have used it.
If that proved too pricy or too inconvenient, I was going to use a Parallels or VM Ware to install an instance of Big Sur.
