It was NoteTaker, from Aquaminds. As Paul Korm says, it’s still available on the Mac App Store.
As I remember the history, the devs of NoteTaker and CPN worked together on the original NeXT app and went their separate ways in the transition to OSX, each bulting their own offspring. NoteTaker was moribund for many years - development resumed after CPN died.
I also remember it being suggested that the idea and much of the design of OneNote was “borrowed” from these two apps. Hard to believ that sucj a thing coukd happen, I know :-)

Keep It Together was the forerunner of Together, which has now morphed into Keep It, I believe.

Notetaker is very similar to Circus Ponies. In fact, it is my understanding that Notetaker came first and one of its developers left and forked into Circus Ponies. Notetaker is still available as a Mac app, but it doesn’t seem to get a lot of attention. It works fine, though.
