I was looking into this myself a couple of months ago. I used NoteTaker quite a bit for a few years, then switched to Circus Ponies NoteBook—at the time NoteBook seemed more functional and they were coming out with an iPad app whereas Aquaminds have never produced anything for iOS except a “viewer” for NoteBooks that was last updated in early 2011.

Anyway, NoteTake has not had an update for over a year (a Mavericks bug-fixer). I don’t now if the product is on the way out, but the signs could point that way—no recent releases, nothing on the blog for years, copyright on the site is 2011—just things that indicate there might not be a shopkeeper. Too bad—in its time it was a great multi-platform product with a really nice and helpful support team. Maybe someone will reactivate development and bring the technology and platforms up to date.
