I agree with you that the most important thing by far is that “a product” does it job, and as I’ve said I have no doubt IH does.
That said new and better ways of doing things come along all the time and to attract “new” customers and business, product designers and developers need to be cognizant of this.
Existing customers may well stay loyal to a product for a long time, even if it doesn’t have the latest shiny new bits and pieces, but will “new” customers buy “the product”, and if they don’t can the company survive on their existing customers alone.
Other than a lack of resources, I can’t think of any reason why products can’t have both the meat and the skin. That is certainly what I try to achieve as a software developer. Also let me tell you that it is easier than ever to have a good UI these days. The hard work is all in the meat.
BTW I did not start using the term “state of the art”.
