I actually switched to a OS X at home (I already use it at the office for laying out a monthly newspaper) in part because of the intense activity in the OS X outlining sector. OmniOutliner is superb, NoteTaker and NoteBook intriguing, and there are many, many more. Try reading Ted Goransopn’s amazing columns at atpm.com for more.
